Egg Curry

DIRAS Spices Required
DIRAS Turmeric Powder – 1/4 tsp, DIRAS Coriander Powder – 1 tsp, DIRAS Red Chilli Powder – 1/2 tsp
Ingredients
4 boiled eggs
1 large onion, finely chopped
2 tomatoes, pureed
1 tbsp oil
1/2 tsp cumin seeds
1/2 tsp ginger-garlic paste
Salt to taste
Fresh coriander for garnish
Method
Boil eggs for 9–10 minutes, peel and make small slits on them.
Heat oil and add cumin seeds. Let them crackle for 10–15 seconds.
Add onion and cook for 5 minutes until golden.
Add ginger-garlic paste and cook for 1 minute.
Add tomato puree and salt. Cook for 6–7 minutes.
Add DIRAS Turmeric Powder, DIRAS Coriander Powder and DIRAS Red Chilli Powder. Cook for 1 minute on low flame.
Add 3/4 cup water and simmer for 5 minutes.
Add eggs and cook for another 4–5 minutes.
Garnish with fresh coriander and serve hot.
Garnishing: Finish with fresh coriander and serve hot.
